Chicken & Rice Bowl (Good for Digestion)
Ingredients:
• 2 boneless, skinless chicken breasts
• 1 cup brown rice
• 1/2 cup carrots (chopped)
• 1/2 cup peas
• 1 tbsp olive oil
Instructions:
1. Cook the chicken – Boil or bake the chicken breasts until fully cooked (about 15-20 minutes). Let cool, then shred into small pieces.
2. Cook the rice – Boil 2 cups of water, add rice, cover, and simmer for about 30 minutes until soft.
3. Steam the vegetables – In a separate pot, steam carrots and peas for about 5-7 minutes until tender.
4. Mix ingredients – In a large bowl, combine shredded chicken, rice, and vegetables. Drizzle olive oil for added healthy fats.
5. Cool & serve – Let the mixture cool before serving. Store leftovers in the fridge for up to 3 days.
