Salmon & Quinoa Meal (Supports a Shiny Coat)
Ingredients:
• 1 salmon fillet (boneless, skinless)
• 1 cup cooked quinoa
• 1/2 cup spinach (chopped)
• 1 tbsp coconut oil
Instructions:
1. Cook the salmon – Bake at 375°F (190°C) for 15-20 minutes or pan-sear in coconut oil. Flake into small pieces.
2. Cook the quinoa – Rinse quinoa, boil 2 cups water, add quinoa, simmer for 15 minutes.
3. Sauté spinach – In a pan, lightly sauté spinach in coconut oil for 1-2 minutes.
4. Mix & serve – Combine all ingredients in a bowl, let cool before serving.
